Eye Feast #8 - I Love Lucy

I Love Lucy
1951-1957

I have watched I Love Lucy all my life. Both my grandma and my mum love it. Now, so do I. it doesn't even matter that this show was filmed in the 50s. The shenanigans that Lucy and Ethel get into makes me laugh, even today, even when I've already seen the episode.

Her comedy is so funny and insane and yet she is so lovable that you can't help but watch her drag Ethel into things and see how she tries to get herself out of them.

I'm not alone on this thought either. I Love Lucy was rated the #2 show of all time by TV Guide (Seinfeld was #1).

Things I love about I Love Lucy:

Her clothes. I mean, are you kidding me? She has the best clothes. I love 50s dresses.

Her love of chocolate.

Her cooking skills.

Her health consciousness.

Her Ricky. I know that in real life he was kind of an ass and they ended up getting divorced but in the show he stayed with her even after all the crazy things she did.

Her best friends. They were always there ready to dress up in whatever costume she needed them too.

Her one-liners.  Here is a list of some famous I Love Lucy quotes.

Lucille Ball paved the way for many female comediennes by showing that you can be funny and pretty at the same time; all you needed was a little practice, a willing friend, and a complete disregard for anything your husband says.

Chunky Chipotle Mashed Potatoes

I've been trying to cook a lot more but our kitchen is super tiny and sometimes I'm just too lazy.

The other day however, I was pumped!

So I decided to make some Chunky Chipotle Mashed Potatoes.

The recipe is from Pati's Mexican Table.

CHUNKY CHIPOTLE MASHED POTATOES Serves 6

INGREDIENTS
3 pounds red potatoes
4 tablespoons unsalted butter
4 scallions
1 chile from a can of chipotles in adobo sauce, or to taste
1 to 2 tablespoon chipotles in adobo sauce, optional
1/2 cup milk
Kosher or sea salt, or to taste
Freshly ground black pepper, or to taste

TO PREPARE
Rinse and quarter the potatoes. In a large pot, bring salted water to a boil. Add the potatoes and cook for about 15 minutes over medium- high heat, or until thoroughly cooked and soft. Drain.
In a large, heavy skillet set over medium heat, add the chunks of butter. Once it melts and begins to bubble, stir in the scallions and cook for a couple of minutes until they soften. Add the chopped chipotle chile and combine well. Add the cooked potatoes along with the milk.
Using a potato masher or a wooden spoon, mash the potatoes roughly as you mix them with the chipotle and scallion mixture. Sprinkle with salt and freshly ground pepper to taste. Serve hot.

As always you have to bear with me because I don't measure.

I think that if you cook or start cooking you'll find that sometimes things don't always work out.

Because sometimes you don't have three hands or a Kitchen Aid mixer to slowly add the eggs to the hot liquid before it congeals and cooks. Or you don't have the right kind of slow cooker that goes from its pot to the oven (though that seems needless -- isn't the point of the slow cooker to set it and forget it?).

In this case I didn't have 4 other people to feed or a ginormous pot to house 3 pounds of potatoes and the water needed to boil them.

WHAT I DID:
I filled my pot about halfway with water and then added potatoes one quarter by one quarter when it came to a boil so that I was sure that there would be enough room.

  • I used 2 tablespoons of butter since I didn't have 3 pounds of potatoes.
  • I added all 4 scallions because I love them.
  • 2 chipotle chiles in adobe sauce. One with the seeds and one I de-seeded to add only the flavor but not the heat.
  • I didn't end up adding any additional adobo sauce.
  • I used just a little bit less than half a cup of milk. About 1/3 cup.
  • I added garlic, finely minced when I added the scallions to the butter.
  • I mashed my potatoes with a fork, and yes it took forever, because I don't have a potato masher or a wooden spoon.
  • When the potatoes were ready I added a bit of Mexican shredded cheese in the mix.

Neither John nor I were sure we'd like them. As the only chipotle thing I like is the restaurant (and I don't even think they have chipotles in their food) I didn't have high hopes of liking this dish. But when I saw Pati make it on TV it looked delicious. I think that's how those cooking shows get you. They way they film and photograph it -- they can make anything look delicious.

So needless to say that when I tried them I was apprehensive. But after doing the whole three taste thing. The first taste to taste, the second to acclimate the palate, and the third to decide -  I was very happy with the way they came out.

The chipotle adobe sauce definitely adds another layer to what is essentially loaded mashed potatoes. It makes the potatoes smokey and spicy but with the butter and the milk, still creamy enough to be reminiscent of the much beloved side dish.

In her show Pati serves them with some chicken thing but as I have yet to fully understand the concept of cooking whole meals, I ate mine with an avocado sandwich.

Eye Feast #9 - Buffy & Angel

Buffy
1997-2003
Created by: Joss Whedon

Angel
1999-2004
Created by: Joss Whedon & David Greenwalt

I decided to combine Buffy and Angel into one post since they are set in the same universe and some of the same characters are in both shows.

Buffy was a living testament to the 90s, with scrunchies, frosted lipstick and the high ponytail. The show became a cult classic and still lives on with fans to this day. The characters, the Big Bads, and the universe was so expertly done (duh it's Joss Whedon's work) that once the TV show ended they continued the storyline in comic book form.

Angel, which was like man-Buffy on steroids, was the darker, deeper, brooding-er version. He ended up with his own entourage and kicked butt and took names...in the dark.

What I like about Buffy:

She's a girl. Go feminism! She may still wear make up, want to be Homecoming queen but she could wield an axe, kick ass, and tell whatever evil she was fighting to go to hell -- and do it all with a snappy attitude. That is my version of a female superhero.

She may have been the "chosen one" but she still decided how exactly her destiny was going to play out.

Xander was always around to lighten the mood.

Spike. I love him. He may look 80 years older than Buffy, actually be a 100 vampire years older than her, have ugly, crazy bleach blonde hair, but if you get to the end of both series there is no way you cannot possibly love him. And his accent. Cannot forget the accent.

The musical episode.

Willow and Tara's relationship.

Giles and his father-like caring, devotion, and love for Buffy. And his accent. Cannot forget the accent.

Things I like about Angel:

Angel. And his muscles.

Wesley. Because he was all nerdy and by-the-book and then he became a badass. And his accent. Cannot forget his accent.

Lorne!

These shows were my first introduction to the awesomeness that is Joss Whedon and his mind. They are funny, thoughtful, interesting, and always true to the human spirit even when they're not entirely human.

Eye Feast #10- 30 Rock

30 Rock
2006-2013
Created By: Tina Fey

Tina Fey is amazing. I think that pretty much sums it all up.

Not only is she smart, funny, Bossypants, and looks great in glasses -- she understands that the way to a woman's heart is through fried cheesy goodness.

She and I have the same eye problem.

"I want to roll my eyes right now, but the doctor says that if I keep doing it, my ocular muscles might spasm and eject my eyeballs."

I love 30 Rock because Kenneth is the cutest/creepiest character on television.

I love the fact that Tina Fey eats in every episode and actually talks about food.

There are some lines you never expect and the way they are delivered! It's gold.

Even though 30 Rock is funny it can still make you think.

They speak the truth in a funny way.

Liz Lemon is a role model for every fat girl who would rather stay inside her apartment, watching TV, eating Sabor de Soldedad cheese puffs, and not worry about what clothing is currently in season.

Liz: For instance, Jack taught me not to wear tan slacks with a tan turtleneck. I thought it looked nice, but he rightly pointed out that it made me look like a giant condom.

30 Rock is a show about a show that I wish I could work on.

My 10 Favorite Eye-Feasts

I watch a lot of Netflix and my mum buys a lot of DVDs during the Christmas season when they are on sale.

Which means I spend a lot of time (too much time probably) sitting in front of a TV.

Not to mention that it is also my job to watch TV (definitely too much time on my ass).

But there are some shitty things out there right now. And I'm glad to say that I've never seen Honey Boo Boo or Toddlers and Tiaras.

Though, I will eye-devour any wedding shows - at least I did when I had cable. I love My Fair Wedding. David Tutera is amazing at his job especially when the bride picks some crazy-ass theme.

Anyway, I thought I'd let you in on my top ten favorite TV shows.

Each TV show will get its own post though. So this is really just a teaser.

Be on the lookout for them! And once they're all up and posted I'll put the entire list here for your convenience.

Lazy Lemon Berry Scones

After a long day of work and by long I mean it felt longer than it actually was, I came home and wanted to bake something.

I had seen this recipe on Pinterest for Lemon Blueberry Scones and thought it would be perfect to make because my blueberries were going to go bad if I didn't use them soon.

So I got home at around 11:30 pm and started to whip this up. The dough didn't take long at all and because I was making these for John and myself only. I didn't have to make them look pretty because...really who has time for that? If it's just for us I don't have the time or the patience to make them all look perfect; especially if it's my first attempt at a recipe. What if they don't come out? All that time measuring and weighing and patting my dough for nothing.

Anyway, once I took them out of the oven and tasted them I knew that this recipe was a keeper and so if I ever do make them for other people I might just make them...even.

I used this recipe from Shannon Mulligan Photography. I did alter it a bit but not by much. Visit her site for what your scones can look like if you put some effort into it.

Lemon Blueberry Scone Dough

2 cups flour
1/4 cup sugar
1 tbsp baking powder
1/4 tsp salt
6 tbsp cold butter
1/3 cup milk
1/4 cup fresh lemon juice
1 tbsp lemon zest
1 cup fresh blueberries
milk for brushing tops*

Directions for dough:
Preheat oven to 400°
Combine flour, sugar, baking powder, and salt. Cut butter into dry ingredients till crumbly. Stir in milk, lemon juice and lemon zest until moistened. Fold in fresh blueberries. Pat into circle about one inch thick on lightly floured counter. Cut into 8 wedges. Place one-two inches apart on a lightly greased cookie sheet. Brush tops with milk. Bake for about 17 minutes or until golden brown. Cool slightly and drizzle with glaze.

My Observations:
My dough came out kind of wet so I didn't want to add any more liquid to the scones. I just put them in the oven with nothing on top.

The reason I think my dough came out a bit wet was the fact that I had just rinsed the blueberries and threw them in without patting them dry first. When you clean your blueberries pat them dry or lay them out on a towel so that it soaks up a lot of the water. Then, when you add them to the dough it won't change the consistency.

If you pat your blueberries and find that your dough is too dry just add a LITTLE bit more milk. In tiny, tiny increments until it's the right consistency. Remember, you can make it wetter, but you can't go make it drier again.

Instead of cutting the scones into triangles I took the dough directly from the bowl, rolled them in my hands and placed them on the cookie sheet. Then I flattened them a bit until they were more-or-less-kind-of the same size. Her recipe makes 8 wedges; mine made 6 lumps.

Lemon Glaze

1/2 cup powdered sugar
1 tbsp lemon juice
pinch of lemon zest

Directions for glaze:
Combine all ingredients in a small bowl. You may need more or less lemon juice to get the consistency you need.

My Observations:
I zested and squeezed one whole lemon into a bowl. I added sugar until the glaze was the consistency I wanted. I didn't measure it out mainly because I didn't want half a lemon in my refrigerator and I didn't want to measure. I bake lazy.

Still, I think that my lazy version is just as good as the real version. They were moist and crumbly and had the right amount of lemon and blueberry. The glaze on top added a nice, refreshing kick of lemon since it wasn't baked in.

I would definitely make these again.
